Hi! Gosh, I don’t know what is up with me today but I am feeling a million different things all at once… I’m energetic, sleepy, snacky, happy, anxious. I just don’t know what my deal is!

This morning I had an early class…it was a one time meeting type deal. It’s a course we have to take the semester before student teaching. Basically I will spend the entire semester compiling a huge binder full of artifacts from my years spent in the College of Education. My artifacts have to meet a certain set of standards. This binder is better known as the “Tier III Assessment Portfolio”. Thinking about it makes me very anxious, but it is definitely something I need to think about because I can not wait until the last minute to start this monster of a portfolio. My plan is to work on it bit by bit throughout the semester. Wish me luck!

After class my friend and I hit up our campus gym…loved it! I hadn’t been to our gym since way before Hurricane Katrina. The fitness center was beautiful on the inside with a lot of equipment and huge windows overlooking campus, but my treadmill was a bit old. There was not even a spot for me to put my iPod or my water bottle. But it really was no big deal, I dealt with it! I rarely workout with a friend and it was a nice change πŸ™‚

Tonight my mom and I are going to a Southern Living party. I am so excited! My mom has been to a few, but I’ve never been to one. I am really looking forward to it. It will be something nice to do with her!

The Royal Street Urn. I love the arrangement in the urn, as well. My mom is going to have it made. There are going to be so many pretty things to order tonight…it could be dangerous, haha!

The party is at my friends home and I am bringing a dip…Eight- Layer Mediterranean Dip to be exact. It’s another recipe from my Whole Foods iTouch app (love that app!), but you can also find it here. Doesn’t it look yummy?

I am making it later this afternoon and I can’t wait to try it tonight! I love every single ingredient that is going into it, especially the pita chips used to scoop it out!

Good morning! This morning has been slow, but packed with goodies! I am so thankful for mornings like these! I woke up and read some Romans, ate some waffles with Mighty Maple peanut butter and blueberries, drank my coffee, checked blogs, and watched Regis & Kelly. And, now I am here πŸ™‚ Yoga is next.


Last night for dinner I made a Mushroom and Grueyre Quiche. It was a Whole Foods recipe I got from the Whole Foods Recipe app on my iTouch. Love that app, by the way! I’ve got another recipe from the app planned for Sunday, too!

So I started by roasting button mushrooms, portobello caps (that I diced), and half of a yellow onion seasoned with salt, pepper, and extra virgin olive oil. 15 minutes at 400 degrees F.

When these were done roasting I mixed them with 4 oz. of Gruyere that I grated before hand. I love Gruyere! I love all cheese, actually.


I also whisked together 2 eggs, 1/2 cup of 2% milk (opted against using heavy cream like the recipe called for), and some thyme.


And then I layered the mushroom, onion, & cheese mixture on the bottom of a pre-baked pie shell and poured the cream mixture on top.


Popped it in the oven for around 45 to 50 minutes at 350 degrees F and voila!


Quite pretty, eh?

IMG_7760Look at those mushrooms! This quiche was very delicious and was a huge hit with my family too. I love mushrooms and this quiche was full of them. And it was so easy to make, but it was time consuming. I started prepping at 5:00 and it was not ready until about 7:00. It was worth the wait though!

Okay, so I am off to my matthankfully. I have a Physique 57 DVD appointment with Lizzy at 4:30 and then possibly going to help a friend babysit later tonight…depending on my energy level!

Hey y’all! I hope Saturday has been fun for everyone. Oh, I just love the weekend πŸ™‚ Don’t y’all?

I’ve been watching the Healthy Living Summit LIVE…here. It’s been sooo informative and I wish I was in Boston right now! But, I am not and that’s okay! Because, tonight is sushi and I could not be more content. My parents, me, and a family friend whom I have not seen in a while are going to sushi at Sake Cafe. I love Sake…the one Uptown to be exact. There are many Sake locations all over the New Orleans/Metro area, but the one Uptown on Magazine Street is definitely the one I prefer. The sushi rolls are always presented so beautifully and everything is always fresh and bursting with flavor. And, the rolls are always large and hold their shape well. A pet peeve of mine is when a sushi roll falls apart, in between chopsticks, on the way to your mouth! Not necessary or fun!

So, last night my Uncle’s birthday party was a lot of fun, the Saints won (woohoo!) their first pre-season game, and we all enjoyed a lot of this…

IMG_7711and it was really yummy. Cookie Cake is one of my favorite cakes. Cookie Cake and the Berry Chantilly from Whole Foods. I am always happy when I am able to have a slice of either of these cakes. Aren’t cakes such a blessing? Yes, they are!

Hey y’all! How’s Tuesday going so far? Mine’s going well…nothing too exciting! I went to the doctor and stopped in Whole Foods for just fruit…and left with so much more, haha. Oh well. Who can pass up new flavor Larabars (Peanut Butter & Jelly, German Chocolate Cake, Tropical Fruit Tart) and oatmeal cookies and fresh vegetable kabobs and white chocolate raspberry gelato and italian vegetable quiche and Glenny’s brownies (that the Whole Foods down here JUST got in stock!)?? Well I certainly couldn’t pass any of those goodies up, that’s for sure. There may or may not have been other items that snuck into my cart, too πŸ˜‰ Sometimes I enjoy shopping at Whole Foods more than I enjoy shopping at J.Crew. Oh, and I already tried the PB & J Larabar…in love.

I’m still reading the book of Daniel and still loving it. I love starting my day off with God’s word. I like filling my cup up with scripture early in the morning. That way it’s with me all day and my worries aren’t as important anymore.

I had also gone to Whole Foods for some special ingredients for Sunday dinner. I was going to cook Salmon & Eggplant Curry from the newest issue of Eating Well. But, being me, I forgot to look for the fish sauce. I could go back to Whole Foods later this week and pick it up, but I am deciding to stay out of there for a few weeks based on what I spent today, oops! I know salmon is definitely on the menu for Sunday no matter what so I found 2 different replacement recipes. One is Salmon & Escarole with Lemon-Tarragon Butter from Eating Well and the second is Salmon with Puff Pastry and Pesto courtesy of Giada De Laurentiis. I adore Giada to peices, by the way.Β  I am leaning toward the Salmon & Escarole dish because it seems interesting to bake salmon in foil packets (atleast it’s seems interesting to moi), but I have to take a vote with the family tonight.

It’s so hot today. Even inside. I have been drinking water like it’s nobody’s business. I would really love a tall glass of sweet tea though.

My friend’s mama makes the best sweet tea. It’s the only sweet tea I drink, and it would be so delicious right now.

I wouldn’t take it off. And when I did take it off it was just so it could be washed and put right back on. The only difference is that my skirt had a hot pink elastic waistband. It was pretty sassy, if I do say so myself.
