summer’s over by megan

Happy Monday! Well, summer’s over…for the South anyway. I am pretty sure all elementary schools, high schools, and universities are offically back in session after today. As for me, I do not start class until Wednesday! This is my last semester before student teaching in the spring and I am very anxious to see what God has in store! I love the beginning of each new school year…a fresh start! So, yes Wednesday is my first day back and I have yet to get my school supplies together. I have purchased them…I just need to transfer them from the Office Depot bag into a tote and fill the binders with paper. Oh, how I love school supplies! Since I only have 1 class and 1 lab this semester I did not need too many supplies…but I am happy with what I found, so I thought I would share them with you…

IMG_7772Yay! I am most excited about my Wilson Jones accordion folder and my multi-colored R.S.V.P. pens πŸ™‚ Oh, and I totally scored that Vera Bradley binder at TJ Maxx for 3 bucks. The same day I found my linea pelle bag…oh, it was a good shopping day! Indeed it was.

So far today I enjoyed spending some time with God this morning in Romans, ate some cereal and blueberries, went to the gym, went to the bank, went to get gas, and ate lunch. It has been a wonderful day so far. Not to mention it is absolutely gorgeous outside! I have been driving around with the windows down...love doing that, I definitely don’t do it enough. I should be spending more time outside today enjoying this weather…I am thinking some reading is in line for this afternoon πŸ™‚ I started reading Julie & Julia last night and I can’t wait dive back into it!

Good morning! This morning has been slow, but packed with goodies! I am so thankful for mornings like these! I woke up and read some Romans, ate some waffles with Mighty Maple peanut butter and blueberries, drank my coffee, checked blogs, and watched Regis & Kelly. And, now I am here πŸ™‚ Yoga is next.

Last night for dinner I made a Mushroom and Grueyre Quiche. It was a Whole Foods recipe I got from the Whole Foods Recipe app on my iTouch. Love that app, by the way! I’ve got another recipe from the app planned for Sunday, too!

So I started by roasting button mushrooms, portobello caps (that I diced), and half of a yellow onion seasoned with salt, pepper, and extra virgin olive oil. 15 minutes at 400 degrees F.

When these were done roasting I mixed them with 4 oz. of Gruyere that I grated before hand. I love Gruyere! I love all cheese, actually.

I also whisked together 2 eggs, 1/2 cup of 2% milk (opted against using heavy cream like the recipe called for), and some thyme.

And then I layered the mushroom, onion, & cheese mixture on the bottom of a pre-baked pie shell and poured the cream mixture on top.

Popped it in the oven for around 45 to 50 minutes at 350 degrees F and voila!

IMG_7760Look at those mushrooms! This quiche was very delicious and was a huge hit with my family too. I love mushrooms and this quiche was full of them. And it was so easy to make, but it was time consuming. I started prepping at 5:00 and it was not ready until about 7:00. It was worth the wait though!

Okay, so I am off to my matthankfully. I have a Physique 57 DVD appointment with Lizzy at 4:30 and then possibly going to help a friend babysit later tonight…depending on my energy level!

school, shelves, & skincare by megan

Hey y’all! How’s Tuesday? Mine’s good so far…calm and relaxing. Still loving my Hempmilk oats and the book of Romans this week πŸ™‚

I spent the morning and early afternoon with my sister running errands concerning school…parking decal pick-up to be exact. I can’t believe school starts next Monday, August 24. Technically, it starts August 26 for me. I only have class on Wednesday this semester because I am only taking 5 hours…don’t ask. But I student teach in the Spring and graduate in May! So believe it or not I am actually looking forward to this semester…I will have a light load for once. Phew!

In other news! I have been meaning to bring this up… in mid summer my parents decided to buy a lot in our favorite area of New Orleans-Lakeview. I am very excited about this move…I will have the chance to walk to the grocery, to have coffee, or to lunch/dinner! And, I will be able to bike places as well, which I am most excited about! My dad has already said each family member will own a bike. Where we live currently we are not able to bike or walk anywhere…it is a very car friendly area, so to speak. Anyway, we have a corner lot and I am so excited about the planning that comes with building/designing a home! Even if I may not be living in it for too long after I graduate…who knows, though! Of course I have been searching home decor magazines and websites frequently for my bathroom and bedroom ideas. So, far I most definitely know I want a built-in bookshelf in my bedroom. I have a closet bursting with books…novels, school books, childrens literature, magazines, etc. These are a few built-in shelves I am loving…

But, I think this one is meant for a living room or library even…

I just love the idea of looking at my wall and being able to look at my book collection! I want to showcase my books, instead of hide them in my closet or in containers under my bed. I also want a window seat in my new bedroom and I would love my walls painted bright blue, like Carrie’s new apartment…

…with one wallpapered wall. But, I will leave these topics of wallpaper, paint, and windows for later posts! Especially since the home will not be complete for at least another year.

Concerning my new skincare regime I am hoping to begin…I am thinking about investing in this moisturizer that I read about in my new Body + Soul.
