Good morning!

I’m just sitting here watching the Today show, love Hoda & Kathie Lee! It’s been such a wonderful morning!!! I woke up early and spent some time with God, had a yummy breakfast, did some Physique 57, showered, and now I am wasting time until lunch before leaving for class at 2. Long day ahead of me today.

  • Bio Lab 2:00-4:00. I am feeling a little apprehensive about it.
  • Early Childhood class from 5:00-6:50…should be home a little before 8:00 tonight. It is a long day, that’s for sure. But, at least it is a beautiful day!

So my yummy breakfast was not anything out of the ordinary- Kashi Honey Oat waffles with White Chocolate Wonderful peanut butter spread on one waffle and this amazing creation spread on the other waffle…

Organic Adriatic Fig Spread. This spread is why my breakfast was so yummy! I forgot this was in our fridge. My mom bought it and I have never used it before! This is the best fig spread I have ever had. There are lots of fig throughout and it is so sweet! I love all things sweet! Oh, I can’t wait to use it again πŸ™‚ I can’t find anywhere to order it online, but my mom found it at Whole Foods.

Good morning! This morning has been slow, but packed with goodies! I am so thankful for mornings like these! I woke up and read some Romans, ate some waffles with Mighty Maple peanut butter and blueberries, drank my coffee, checked blogs, and watched Regis & Kelly. And, now I am here πŸ™‚ Yoga is next.

Last night for dinner I made a Mushroom and Grueyre Quiche. It was a Whole Foods recipe I got from the Whole Foods Recipe app on my iTouch. Love that app, by the way! I’ve got another recipe from the app planned for Sunday, too!

So I started by roasting button mushrooms, portobello caps (that I diced), and half of a yellow onion seasoned with salt, pepper, and extra virgin olive oil. 15 minutes at 400 degrees F.

When these were done roasting I mixed them with 4 oz. of Gruyere that I grated before hand. I love Gruyere! I love all cheese, actually.

I also whisked together 2 eggs, 1/2 cup of 2% milk (opted against using heavy cream like the recipe called for), and some thyme.

And then I layered the mushroom, onion, & cheese mixture on the bottom of a pre-baked pie shell and poured the cream mixture on top.

Popped it in the oven for around 45 to 50 minutes at 350 degrees F and voila!

IMG_7760Look at those mushrooms! This quiche was very delicious and was a huge hit with my family too. I love mushrooms and this quiche was full of them. And it was so easy to make, but it was time consuming. I started prepping at 5:00 and it was not ready until about 7:00. It was worth the wait though!

Okay, so I am off to my matthankfully. I have a Physique 57 DVD appointment with Lizzy at 4:30 and then possibly going to help a friend babysit later tonight…depending on my energy level!

Hi! In honor of Polly…I am so thankful that it is Thursday…aren’t you? Because tomorrow is Friday and Friday is one of my favorite days…along with Sunday and Monday (morning only). I am thankful for lots of things today!

I am thankful that it did not rain last night and the Harrison Avenue Market Place was not canceled! Of course, I was so busy I did not take any pictures and I am so sorry about that. My church was in charge of kid stuff, basically. We had a face painting booth and games. My friend Kiki and I were in charge of games. It was really just one game, “pick a stick”. It was so fun! Kids lined up to pick a maximum of 3 sticks and if any of their sticks had orange on the bottom they won a prize! Of course, I let the kids pick sticks until they got an orange bottomed one, whoops! I just didn’t enjoy the thought of sending them away without a prize. So, I didn’t! The kids and parents were so appreciative that we had games and face painting to entertain the kids with…it’s such a blessing to make people happy!

I am thankful for lunch because at lunch I ate a pluot. Which is a cross hybrid of a plum and an apricot. If you did not know.

and it may be my new favorite fruit! I’ve been on a peach kick for quite some time now. The pluot was small and sweet andΒ  I liked it very much! Small fruit are so cute.

I am thankful for my iPod touch I got yesterday. I love it so, so much! It is so cool…it’s the iPhone without the phone. Is it strange that I get online on my iPod touch more than on my MacBook? I’m just so excited about it I find myself twittering from it and checking facebook even though my MacBook is 2 feet away from me!

Oh! And I am thankful that I am cooking dinner tonight…some type of Orzo Chicken dish with goat cheese and grape tomatoes! I got the recipe from Cooking Light. I will let y’all know how it turns out. But it does have my favorite ingredient, goat cheese, in it so I am pretty confident it’s gonna be a winner πŸ™‚

The Healthy Living Summit starts today! If any of y’all are headed to Boston or are there I hope y’all have a great time! I know it is going to be such a good thing. I wish I was able to go. Maybe next time! I am very thankful for all of the fabulous ladies behind HLS. They are seriously some inspiring and beautiful bloggers.

And most of all I am thankful for this:

Currently I am sitting in my room waiting for a delivery. My sister, Lizzy, ordered a Mac a few days ago and today is the day it should be arriving. So, since I am unemployed I get the thrill of waiting for the delivery so Lizzy won’t have to drive to UPS and pick it up. It’s fine though because it is an excuse for me not to go to the gym and…practice yoga instead! Did I tell you that Lizzy and I had the bright idea to order Physique 57 DVD’s? Well we did. And my legs are as sore as they have ever been in my life. After one 35 minute workout. But, it is a good sore! We are doing it again tomorrow. Oh goodness. So, the soreness in my legs is why I think yoga is a better idea than cardio is for today. We will see.

Nothing too exciting going on today. It’s rainy down here. I have fun plans for the afternoon though- if the rain doesn’t get in the way, that is! I am meeting my friend, Jen, for coffee and if it does not rain off to Lakeview for the Harrison Ave. Marketplace.

I am so excited about the market. My church is a sponsor and I have never been before so I am really looking forward to it. There’s live music and food and crafts and cooking demonstrations. It’s such a wonderful thing! I am going to be helping out with the kids booth…most likely with crafts and such. I will try to take pictures.
