Hi!

How’s your Thursday? Mine’s been wonderful! I’ve been reading all over the blogs that so many of y’all feel like today should be Friday and that this week is going by slow. I don’t think so…I find this week to be going so fast! Maybe it’s because I have been so busy with work! It seems to be non stop this week…it’s nice to be busy though. It’s especially nice to be busy and I am so thankful to take a break to blog πŸ™‚

I am watching Melrose Place right now. I’m so thankful for DVR today. I watched 90210 first…gosh, I loved it in the 90’s and I love it now! I am so excited that all of the shows are starting back up again. Are y’all? Now, I’m just waiting on Gossip Girl, Grey’s Anatomy, Dancing with the Stars, and The Office. Sounds like a lot, I know! But, that’s why I love my DVR πŸ™‚

While catching up on my guilty pleasure of trashy TV watching I am also working on my Hotel, Restaurant, Tourism assignment due Friday. One part of the assignment was to watch this video on You Tube…

I watched it twice πŸ˜‰ Don’t you just love Lumiere and Mrs. Potts? Oh, and who can forget Chip? Yep, I am definitely thankful for Beauty and the Beast!

Cooking dinner tonightPan-Grilled Snapper with Orzo Salad.I am super excited about it! My mom is picking up the snapper today after she is done shopping (what a life). But if we don’t have snapper I will just use tilapia instead. I’ll let ya know how it turns out, for sure. I am a huge fish lover and I just adore Orzo!

Hi! Gosh, I don’t know what is up with me today but I am feeling a million different things all at once… I’m energetic, sleepy, snacky, happy, anxious. I just don’t know what my deal is!

This morning I had an early class…it was a one time meeting type deal. It’s a course we have to take the semester before student teaching. Basically I will spend the entire semester compiling a huge binder full of artifacts from my years spent in the College of Education. My artifacts have to meet a certain set of standards. This binder is better known as the “Tier III Assessment Portfolio”. Thinking about it makes me very anxious, but it is definitely something I need to think about because I can not wait until the last minute to start this monster of a portfolio. My plan is to work on it bit by bit throughout the semester. Wish me luck!

After class my friend and I hit up our campus gym…loved it! I hadn’t been to our gym since way before Hurricane Katrina. The fitness center was beautiful on the inside with a lot of equipment and huge windows overlooking campus, but my treadmill was a bit old. There was not even a spot for me to put my iPod or my water bottle. But it really was no big deal, I dealt with it! I rarely workout with a friend and it was a nice change πŸ™‚

Tonight my mom and I are going to a Southern Living party. I am so excited! My mom has been to a few, but I’ve never been to one. I am really looking forward to it. It will be something nice to do with her!

The Royal Street Urn. I love the arrangement in the urn, as well. My mom is going to have it made. There are going to be so many pretty things to order tonight…it could be dangerous, haha!

The party is at my friends home and I am bringing a dip…Eight- Layer Mediterranean Dip to be exact. It’s another recipe from my Whole Foods iTouch app (love that app!), but you can also find it here. Doesn’t it look yummy?

I am making it later this afternoon and I can’t wait to try it tonight! I love every single ingredient that is going into it, especially the pita chips used to scoop it out!

Hey guys! Happy (thankful) Thursday πŸ™‚ Right now, I am thankful for my warm cup ofΒ  French Market coffee that I am enjoying oh so much!

I am also thankful that I am able to cook dinner tonight for my family! A few months ago I started cooking dinner for my family once a week, usually something healthy and easy. I really enjoy cooking and I am so thankful that I have the chance to do so. It was not until a few months ago that I began to show interest in using the stove and oven, instead of only relying on the good old microwave. I guess I thought the microwave got the job done in half the time a stove or oven would. But, I am beginning to enjoy spending time preparing meals. There is so much love and effort behind a meal. And, I really love sitting down with my family to eat what I’ve prepared…at the dinner table, at the same time (like we used to every single night when Lizzy and I were growing up…before college and jobs and boys took place)! Family dinner is a rare occurrence and is usually reserved for Sundays, but I notice our family dinner beginning to take place more and moreΒ  during the work week and it’s lovely.

So, anyway the menu for tonight is Grilled Tilapia with Smoked Paprika and Parmesan Polenta. It’s a Cooking Light recipe and sounds delicious, healthy, and simple. I can’t wait to get in the kitchen later! I mean look at what will be the result…

Good morning! This morning has been slow, but packed with goodies! I am so thankful for mornings like these! I woke up and read some Romans, ate some waffles with Mighty Maple peanut butter and blueberries, drank my coffee, checked blogs, and watched Regis & Kelly. And, now I am here πŸ™‚ Yoga is next.

Last night for dinner I made a Mushroom and Grueyre Quiche. It was a Whole Foods recipe I got from the Whole Foods Recipe app on my iTouch. Love that app, by the way! I’ve got another recipe from the app planned for Sunday, too!

So I started by roasting button mushrooms, portobello caps (that I diced), and half of a yellow onion seasoned with salt, pepper, and extra virgin olive oil. 15 minutes at 400 degrees F.

When these were done roasting I mixed them with 4 oz. of Gruyere that I grated before hand. I love Gruyere! I love all cheese, actually.

I also whisked together 2 eggs, 1/2 cup of 2% milk (opted against using heavy cream like the recipe called for), and some thyme.

And then I layered the mushroom, onion, & cheese mixture on the bottom of a pre-baked pie shell and poured the cream mixture on top.

Popped it in the oven for around 45 to 50 minutes at 350 degrees F and voila!

IMG_7760Look at those mushrooms! This quiche was very delicious and was a huge hit with my family too. I love mushrooms and this quiche was full of them. And it was so easy to make, but it was time consuming. I started prepping at 5:00 and it was not ready until about 7:00. It was worth the wait though!

Okay, so I am off to my matthankfully. I have a Physique 57 DVD appointment with Lizzy at 4:30 and then possibly going to help a friend babysit later tonight…depending on my energy level!

Hi y’all! I have such trouble coming up with titles for my posts…so I usually just write what pops into mind first! It’s rainy today so in popped “wet wednesday”.

Look at her in the rain! Doesn’t that look like loads of fun though? Especially since this little girl is wearing a pink tutu and green frog rain boots. I am pretty sure owning a pink tutu would make my life complete. I would love to own both, boots and tutu, though. Please and thank you!

So far today I went to the gym, watched Gilmore Girls, watched Giada, and (once the rain slowed to a drizzle) went to the grocery. It was a quick shop at Rouse’s for recipe ingredients for tonight’s dinner and some fruit

I love summer fruit. Well, I mean, I love fruit in general! I picked up some bananas, gala apples, nectarines, peaches, and pluots. Blueberries in the fridge. Now we are fully stocked. I love having a full, bursting fruit bowl on the counter. It makes me happy just knowing I can grab some fresh goodness whenever I want.

I really need to do some yummy yoga. I think I might…as it rains outside. Sounds kind of relaxing, actually. Happy Wednesday!

This morning at the gym I watched Gilmore Girls and it made me very happy! I love that show…Lorelai’s way of thinking and living is just so wonderful to me. She and Rory are the epitome of mother/daughter best friends…and that makes me feel happy for some reason.

I am happy to report that the Chicken Orzo Salad with Goat Cheese I made last night for dinner was a winner!

IMG_7651It’s really pretty! I love the bursts of color from the grape tomatoes and the spinach. I used spinach instead of arugula and it turned out really delicious! Also, before I served it I topped each serving with goat cheese crumbles. My family loved this salad so I was a happy girl. I love to be in the kitchen…cooking, eating, whatever! Also, we ate this salad lukewarm. I don’t think it was meant to be hot. I am going to eat it cold today for lunch and see how it tastes at that temperature, too. Y’all should try this recipe! It’s very light and perfect for summer.

Tonight is the first Saints pre-season game! I am not much of a football gal, but I do love to support and cheer for my Saints!! I may not know the football lingo…but I do know when we make a touchdown! We are going to watch the game at my aunt & uncles house and celebrate my uncle’s birthday at the same time.

So with that being said my evening will consist of…salad, wine, pizza, birthday cake, football, and family. Who knows, there may be ice cream thrown in there too! Love.

Hi! In honor of Polly…I am so thankful that it is Thursday…aren’t you? Because tomorrow is Friday and Friday is one of my favorite days…along with Sunday and Monday (morning only). I am thankful for lots of things today!

I am thankful that it did not rain last night and the Harrison Avenue Market Place was not canceled! Of course, I was so busy I did not take any pictures and I am so sorry about that. My church was in charge of kid stuff, basically. We had a face painting booth and games. My friend Kiki and I were in charge of games. It was really just one game, “pick a stick”. It was so fun! Kids lined up to pick a maximum of 3 sticks and if any of their sticks had orange on the bottom they won a prize! Of course, I let the kids pick sticks until they got an orange bottomed one, whoops! I just didn’t enjoy the thought of sending them away without a prize. So, I didn’t! The kids and parents were so appreciative that we had games and face painting to entertain the kids with…it’s such a blessing to make people happy!

I am thankful for lunch because at lunch I ate a pluot. Which is a cross hybrid of a plum and an apricot. If you did not know.

and it may be my new favorite fruit! I’ve been on a peach kick for quite some time now. The pluot was small and sweet andΒ  I liked it very much! Small fruit are so cute.

I am thankful for my iPod touch I got yesterday. I love it so, so much! It is so cool…it’s the iPhone without the phone. Is it strange that I get online on my iPod touch more than on my MacBook? I’m just so excited about it I find myself twittering from it and checking facebook even though my MacBook is 2 feet away from me!

Oh! And I am thankful that I am cooking dinner tonight…some type of Orzo Chicken dish with goat cheese and grape tomatoes! I got the recipe from Cooking Light. I will let y’all know how it turns out. But it does have my favorite ingredient, goat cheese, in it so I am pretty confident it’s gonna be a winner πŸ™‚

The Healthy Living Summit starts today! If any of y’all are headed to Boston or are there I hope y’all have a great time! I know it is going to be such a good thing. I wish I was able to go. Maybe next time! I am very thankful for all of the fabulous ladies behind HLS. They are seriously some inspiring and beautiful bloggers.

And most of all I am thankful for this:
